Most Winters are long in Wisconsin. I guess this depends on your perspective..for example, if you are from Alaska- you might say "hey not so long!" Having some interests and hobbies can be helpful. I choose to embrace all of the seasons. Soup can be one of the simpler and warmer joys of Winter. My style of cooking is "a little of this" and "a little of that" with a "let's see what's actually in the pantry" thrown in. This was one of my faves of this Winter.
REALLY EASY!
Winter 'Sabi Soup
Simple Steps: Start with your favorite type of broth- I chose veggie because that's what I had on hand.
Saute some of your favorite vegetables- here I used red onion, celery, carrots and sauerkraut. Season with a bit of celery salt and dill.
Squeeze fresh lime in the bowl just before serving. Add Wasabi Peas (watch out these little guys are potent- very HOT!) If spicy is not for you...a handful of oyster crackers will add a little crunch with out the ouch! :)
If you like, you can vary this recipe by pre-cooking shrimp or chicken and adding to the soup.
